Aji Amarillo Powder
Aji Amarillo Powder has been used for thousands of years in Mayan Cuisine. The pods of the Aji pepper have a distinctive, fruity flavor and are used fresh in Mexican Cuisine, Ceviche (marinated fish) and South American foods. Also used in fresh salsas and the small yellow varieties are prized for their lemony aroma. The pods of all ajis are also dried in the sun and then crushed into colorful fine powders, like ours. An essential ingredient in canning pickles. Dill (Anethum Graveolens) is reminiscent of mild caraway seeds. The Freshest dried Ghost Peppers
The Bhut Jolokia (Capsicum chinense,) or Ghost Chile, named for its ghostly bite, is the hottest chile pepper in the world. Also known as the Naga Jolokia and Bih Jolokia, or poison chile pepper, it has been measured at 855,000 Scoville units up to 1,041,427 units by an independent Indian export company. When ripe, the ghost chiles are 60 mm to 85 mm long and up to 30 mm wide. They have an orange or red color. They are very similar looking to Habanero peppers, but they have a rugged skin. Ghost Chiles are very, very hot Use them sparingly, add a little to fresh salsa, sauces, chili and anything else you want to start a 12 alarm fire! Choose whole or flakes below. Garlic is the most heavily used seasoning in many parts of the world. All of the world's great cuisines, from Greek to Chinese, Italian to French, make abundant use of this pungent bulb. The world's finest garlic is American, grown and harvested in central California. Fresh is the best but it is not available in all ears year round. It also has a limited shelf life.One pound of dehydrated garlic is made from 9 pounds of fresh garlic bulbs. Granulated garlic powder is the most popular type of garlic, since it is easy to sprinkle on meats, vegetables and bread, and measures easily for recipes. Minced dry garlic is also very highly prized. We like it in salad dressings and marinates as well as keeping some on the shelf for use when the fresh garlic is out of season. It can be used right out of the package or rehydrated.To rehydrate: Use 1 tsp. in 1 Tbsp. water to equal 2 fresh cloves. It is important to rehydrate garlic for a few minutes before adding it to tart foods like tomatoes, or to sauces that contain vinegar or lemon juice (the acidic nature of these foods will stop the garlic flavor from developing to its full strength). When adding dry, use 1 /2 tsp. for each garlic clove needed. Sprinkle on poultry, steak, chops or fish; use about 1 /2 tsp. per lb. when marinating meats. The story goes that during her flight from Egypt, the Virgin Mary draped her blue cloak on a Rosemary bush. She then laid a white flower on top of the cloak. That night, the flower turned blue and the bush was thereafter known as the "rose of Mary". Star Anise
Star Anise, Star Anise (Illicium Verum) is a star shaped fruit from an Evergreen Tree that is native to China. These trees can bear fruit for over a century. The tree bears yellow flower that ripens into a brown star shaped spice. The Star Anise seeds are not as aromatic and flavorful as the pod. Star Anise is an important spice in Chinese and Vietnamese cooking and is an essential ingredient in the Chinese five spice powder. Star Anise is not the same as Anise Seed. Both Star Anise and Anise Seed share an essential oil called Anethole (Licorice Taste) which is why these spices have a similar flavor. Star Anise has more of a robust flavor than the Anise Seed. Thyme is the leaf of a low-growing shrub in the mint family called Thymus vulgaris. Its tiny grayish-green leaves rarely are greater than one-fourth inch long. For use as a condiment, Thyme leaves are dried then chopped, or ground. Thyme is also indigineous to the Mediterranean. Thyme is often included in seasoning blends for poultry and stuffing and also commonly used in fish sauces, chowders, and soups. It goes well with beef, lamb and veal as well as in eggs, custards, and croquettes. Thyme often is paired with tomatoes. Thyme has a subtle, dry aroma and a slightly minty flavor. Ancient Greeks considered Thyme a symbol of courage and sacrifice. Tradition tells that Thyme was in the straw bed of the Virgin Mary and the Christ child. In the Middle Ages, ladies would embroider a sprig of Thyme into scarves they gave to their errant knights. At various periods in history, Thyme has been used to treat melancholy, reproductive system ailments, and to improve digestion. Thyme is brimming with an essential oil that is rich in thymol. Thymol, along with rosmarinic and ursolic acids are terpenes and possess anti cancer properties. Thyme can also be used as an antiseptic, antibacterial, and strong antioxidant.
