Marinates can be used to flavor meats as well as tenderize!

The following is a good basic recipe, feel free to modify it with your favorite ingredients!

INGREDIENTS-

1/2 C. Red Wine Vinegar

2 T. Balsamic Vinegar

1 C. Olive Oil

12 oz. Beer or Water

1/2 C. Sugar

2 pc. Garlic Cloves, chopped Dried Minced Garlic is a great substitute

Onion, chopped

2 Sprigs of Fresh Rosemary (1 t. dry rosemary)

6 Sprigs of Fresh Parsley (1 t. dry)

4 Sprigs of Fresh Thyme (1 t. dry)

1 T. Chef Depot House Seasonings

Salt & Pepper, as needed

Method -

Use a Sharp Chef knife to chop the garlic, cut the onion in half and chop it up.

Place all ingredients in a stainless steel mixing bowl and blend together with a wisk. Add meat items and be sure to coat them evenly.

Cover, label, date and refrigerate.

Chefs Notes- I recommend that you turn the meat often. Marinate meats for a few hours to a few days.

I like to use this marinate for boneless skinless chicken breasts, flank steak and round steak. It is also excellent for wild game!

For some meats, I add sun dried tomatoes or soy sauce to this recipe. The marinate recipe can be used for up to 5 pounds of meat. You can use the marinate for up to one week. The marinate can be used twice with certain meats.
