Buttermilk Pancakes with Maple Syrup Bananas

Yield:  9 pancakes (6 in.each)

Ingredients:

cups all-purpose flour +

teaspoons baking powder

 

 

1

teaspoon baking soda

 

 

1/2

teaspoon salt

Tablespoons sugar

 

 

2

large eggs, lightly beaten

 

 

3

cups buttermilk

 

 

4

tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle

 Bananas, sliced into ½ in. pieces

 Tablespoons Pure Maple Syrup – per person!

 

 

 

 

 

Preparation:

 

1.   Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps and be thick like honey, add a little more flour if needed. 

In a sauce pan, melt 1 Tbsp. of butter and add the bananas, let cook for 1 minute, stirring often, add maple syrup and a pinch of ground cinnamon, turn to warm!

 

 

2.   Heat oven to 175°. Heat a non stick frying pan over medium until it is very hot. Spray frypan with non stick spray.

 

 

3.   Using our pancake batter dispenser, drop pancake batter, into circles 2 inches away from one other. When pancakes have bubbles on top and are slightly dry around edges, about 2 minutes, lightly spray with non stick oil, flip over and cook 1 more minute. Bottom should be golden brown!

 

 

4.   Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.
