Sweet & Sour Sauce

 

 

 

 

Yield – 24 oz.

 

 

Ingredients-

 

16 oz. Pineapple Juice

4 T. Crushed Pineapple (optional)

4 oz. White Vinegar

6 oz. Sugar

Dash  Hot Sauce

Salt & White Pepper, To Taste

Few Drops of Yellow Food Coloring(optional)

Cornstarch + cold water (slurry), As Needed

 

 

 

Method -

Combine the sugar and vinegar in a saucepan and boil together, add the pineapple juice and simmer a few minutes. Add the crushed pineapple (optional) and the remaining ingredients, bring to a boil and add cornstarch slurry to thicken. The sauce should be medium thick when cooled.  We use a stainless steel whip to stir this sauce while it is cooking this helps to produce a smooth sauce. This sauce can be served hot or cold.

 

Chefs Note: This sauce is excellent for Egg Rolls and Wontons!

Sweet & Sour sauce is great on chicken and pork too!
