ISLAND SALSA

Yield - 8 servings

 

Ingredients -

 

8 oz. Honeydew Melon, Seeded and peeled, Small Dice

8 oz. Cantaloupe, Seeded and peeled, Small Dice

8 oz. Papaya, Seeded and peeled, Small Dice

4 oz. Red Bell Pepper, Small Dice

1 Small Jalapeno Pepper, Seeded and Minced

2 oz. Red Onion, Minced

1 Small Lime, Juiced

4 T. Cilantro, Chopped

To Taste, Salt and Pepper

 

 

 

Method-

 

Cut all fruits and pepper into a small dice, place in a stainless steel mixing bowl. Wear gloves to seed and mince the jalapeno pepper, mince the onion, add to bowl. Wash and chop the cilantro combine and add salt and pepper and lime, mix well,

Taste and adjust seasonings.

 

 

Chefs Note: This Salsa is excellent over grilled fish!
