Pulla Bread From Finland

Fresh Baked Bread

Chef Edward

Yield: 1 large Loaf and a dozen or more small rolls

Ingredients -

4 tsp. active dry yeast
2 1/2 cups milk, heated to lukewarm
1 Tbsp. crushed cardamom (Note: must be crushed to a sandy consistency before adding.)
1 stick butter, soft
1 tsp. salt
1 cup sugar
Approx. 7 1/2 cups flour
1 egg, beaten (plus 1 later for brushing the Pulla)

Method -

Heat pan on stove to lukewarm. Pour milk into large bread bowl and stir in the yeast. Let it sit for about 7 minutes. Add all the ingredients (except flour & butter) and stir well. Now, stir in about 3 or 4 cups of flour, add the softened butter, and mix well. Add the rest of the flour, and mix and knead by hand. Continue to knead for about 10 minutes. Cover bowl with dishtowel and let rise in a warm place for about 1 to 1 1/2 hours. Remove Pulla and put on a lightly floured table (use dough scraper). Cut into 2 pieces (makes it easier to handle); cover one half to keep it moist. Roll the other half into a log shape and begin to cut small sections and roll into large, golf ball-size pieces. Put about 12 units on a greased or parchment-papered pan. Cover with dishtowel, and let sit for 15 minutes before baking. Now, do the same with remaining dough. These can also be shaped like scones or rolls or braided loaf or add cinnamon and roll them up. About 5 minutes before baking, beat 1 egg in a bowl. Take out a stick of cold butter. Take your thumb and make an indentation on each Pulla bun on the first pan. Put a small piece of cold butter in each bun. Brush each bun well with the beaten egg and sprinkle a small amount of white sugar over each bun. (Be careful not to get sugar on the bottom of pan; it could turn the Pulla black.) In conventional ovens, Pulla can burn easily on the bottom before you get the top to brown (better in pizza oven). You will have to experiment, but basically it takes 15 to 16 minutes for conventional ovens at 375 F. Pizza ovens take a few minutes less, at about 400 f. Many like to bake the buns at 450 degrees F. Cook until light brown. Cool and eat. This Recipe has been passed for a long while: When baked in a conventional oven, this bread is incredible. When baked in a wood oven, this bread is beyond good. However, we must warn you that this recipe is not for the weight-conscious. Enjoy in Moderation, Once you try it, you will be hooked forever. Refer to the 12 steps of bread baking, listed here.
Chefs Note: This is a great basic recipe. Use it and then vary yours. Enjoy. Our wood peels are made in USA, maes it easy to remove bread and pizza from the stone. Click the link above! Our high heat brightly colored spatulas are awesome! Click the link above!

Recipe courtesy of

Chef Edward

Yield: 11-x-17-inch pan focaccia bread

Ingredients -

5 cups unbleached, all-purpose flour
2 teaspoons coarse sea salt
2 Tablespoons dried herbs, oregano, basil and rosemary
1 envelope active dry yeast
8 ounce jar calamata olives, broken in half, pits removed
1 teaspoon coarse sea salt
6 Tablespoons Olive Oil

Method -

In a mixing bowl combine flour, salt and dried herbs. Pour 2 cups warm water into another bowl and whisk in the yeast, then 3 tablespoons of the oil. Let it rest and ferment for 5 minutes. With a rubber spatula stir the yeast mixture into the flour mixture until all the flour is evenly moistened, continue to beat for 1 minute. Cover bowl with plastic wrap and allow to rise until doubled, about 1 hour at 90 degrees. Oil the jelly roll pan with 2 tablespoons of oil. Scrape the dough out of the bowl and onto the pan and pat and press the dough into the pan to fill it completely. If the dough resists, wait a few minutes and continue. Poke holes part way into the dough at 2-inch intervals with your fingertips and drizzle with the remaining oil. Sprinkle on the salt and add the olive pieces. Allow the dough to rise again until doubled in bulk. Meanwhile, preheat oven to 425 degrees. When the dough has risen bake it until medium golden brown, about 25 minutes. Remove the focaccia from the pan and place on a bakers cooling rack. to cool. Cut into squares, these can be split horizontally for sandwiches and panini.
